smoothie bowl Pitta ingredientenI believe summer was made for smoothie bowls. They are so quick, yet so beautiful, delicious and light. Plus nice and healthy. This one I made with my Pitta friends in mind who, because of their own firey nature, can have the hardest time during hot summer days. Their skin often can’t handle direct sunlight and, vain though they may be, they do wise to limit sunbathing to an absolute minimum.

So much so that they often have to be dragged away from their computers and abducted to a beach or park by loved ones for some much needed leisure time. They love beautiful things. And once coaxed to taking some time off they will most likely be found loungeing on the fanciest beach terras with a classy cocktail in one hand and the latest Iphone in the other for some serious selfie-action. But alcohol too is very heating and too much of it in hot summer weather will make them irritated and short tempered.

smoothie bowl Pitta met rozen in vaasSo I made this sweet and cooling smoothie bowl as a great alternative to a pretty cocktail. True, it does have a banana in it and too much banana too often should be avoided by Pitta’s. But if having to choose between a banana and gin I know which ingredient I’d prefer! I mixed in some cooling coconut milk and rose water and topped this beauty with Pitta’s best fruity friends; pomegranate, figs and coconut. So now, instead of looking flustered and hot on instagram you, my firey friend, will look radiantly healthy, cool and collected. You can thank me later!

For one giant cocktail

  • 2 fresh figs
  • 1 pretty cocktail glass
  • 1 just ripe banana
  • 100 grams raspberries
  • seeds of 1/4 vanilla pod
  • 50 ml coconut milk
  • 1/2  teaspoon rosewater
  • a splash of maple syrup (optional, in case your raspberries are not very sweet)
  • Topping: fig, raspberries, shredded coconut, pomegranate seeds, pumpkin seeds, dried and fresh rose petals

Slice the 2 figs very thinly and drape slices along side the sides of the cocktail glass. Save the slices you don’t use for garnish. Mix the banana, raspberries, vanilla seeds, coconut milk, rosewater and maple syrup if using in a blender to a thick rosy pink mixture. Carefully scoop in the glass, making sure not to move the fig slices. And garnish with your choice of toppings.

Voor 1 flink groot cocktailglas

  • 2 verse vijgen
  • 1 mooi cocktailglas
  • 1 net rijpe banaan
  • 100 gram frambozen
  • zaadjes uit 1/4 vanillepeul
  • 50 ml kokosmelk
  • 1/2  theelepel rozenwater
  • een scheutje ahornsiroop (optioneel, mochten jouw frambozen niet zo zoet zijn)
  • Topping: vijgen, frambozen, geraspte kokos, granaatapppelpitjes, pompoenpitten, gedroogde en verse rozenblaadjes

Snij de 2 vijgen heel dun in plakjes en drapeer tegen de rand van het cocktailglas. Bewaar de plakjes die teveel zijn om mee te garneren. Blender de banaan, frambozen, vanillezaadjes, kokosmelk, rozenwater en ahornsiroop als je dat gebruikt in een blender tot een dik roze mengsel. Schenk voorzichtig in het glas, er op lettend dat de vijgenplakjes op hun plek blijven. Garneer met de toppings van jouw keuze.
