The Sweet Potato and coconut Love (Sunday) soup

imageI soup, you soup, everybody loves LOVE soup! I know, a very sad and sorry parody on the I scream, You scream song. But it’s just that kind of day, bear with me….. I started thinking about Valentine’s recipes weeks ago. Reall, really weeks ago. But I just had ZERO inspiration. Why? I don’t know. I guess in an effort to get it spot on I just completely confused myself to the point of almost going crazy. Should it be sweet? No, did that two years ago. Should it be colorful? Should it be red? No, did that last year. And so I kept changing recipes from this to the other so often that I finally decided to let the whole Valentine’s thing go all together. It’s just another sunday right?

imageWell truth be told, I may have no Valentine’s inspiration at the moment but I sure have got myself some great Sunday inspiration. Because Me Myself and I happen to LOVE Sunday. So once I got thát clear, finding the right Love (sunday) recipe was easy. Whenever possible sunday is my day of rest. I sit, preferably in bed, I read, I watch Oprah’s inspiring Super Soul Sunday episodes on my ipad, if lucky I get to make some love, and I eat soup. LOVE soup as you might have gathered by now.

imageThis particular one is a favorite of mine that, over the years, I have cooked on many retreats and workshops. Everyone I have ever met loves this soup. And if they don’t they never tell me, cause they probably sense I’d get all gangster on them! But for real, this soup is the deal. Sweet, smooth, hot and satisfying. Just the way I like my lovers…………. (Boy, am I on the bad joke wagon today!) Not to upset the Gods of Love too much on their special day I added the top two Ayurvedic spices for improving your love life. Golden Saffron and cardamom. Plus almonds and dates for an even bigger 1001 nights wow factor. So who knows? It just might turn out to be a fantastic Valentine’s day after all…..

Sweet potato and coconut Love soup

For 2 lovers and 2 Gods

Heat the ghee or coconut oil in a medium pan. Add the onion and a pinch of salt and fry gently for 2 minutes or so, until onion is translucent. Now add the garlic, spice mix and cardamom. Also add the sweet potato cubes and stir.

Pour in the coconut milk, water or stock and add the coconut blossom sugar. Simmer on medium heat for 20 to 30 minutes or until the sweet potato is done. Puree the soup with a strong hand held blender until velvety smooth. Season to taste. Finally add the peas and simmer for another 3 minutes.

Pour the soup in shallow soup plates. Garnish with dollops of yoghurt, chopped coriander, date rings, roasted almonds and saffron threads.


Nederlands recept

Zoete aardappelkokossoep

Voor 4 personen

Verhit de ghee of kokosolie in een medium pan. Voeg de ui en een beetje rotszout toe en bak een minuutje of 2 tot de ui glazig is geworden. Voeg nu de knoflook, specerijenmix en kardemom toe en bak nog een minuutje mee. Dan gaat de zoete aardappel erbij. Roer even om.

Giet nu de kokosmelk, het water of de bouillon in de pan en schep de kokosbloesemsuiker erbij. Laat op medium vuur 20 tot 30 minuten sudderen tot de zoete aardappel goed gaar is. Pureer de soep met een sterke staafmixer tot een zijdezachte consistentie en breng op smaak met zout en peper. Voeg tot slot de doperwten toe en laat nog 3 minuten sudderen.

Schep de soep in ondiepe soepborden en garneer met de yoghurt, dadelringen, amandelen, saffraan en korianderblaadjes.
