Healing apple crumble muffins

imageI have just finished my 4th week of Project ME! My personal 7 week journey to balance, beauty and bliss. The week’s theme was Week of Healing and I can tell you this. It was a hugely impactful week for me. With bing bing moments going off in my head like fire work on New Years eve.

imageThese days healing seems like a the new buzz word. You hear it every where. So I wanted to find out what it means to me personally, instead of blindly adopting the meaning everyone else has given it. I also wanted to identify the areas in my life that most needed healing and think up a strategy to go about this whole healing business. I came up with a brilliant holy triangle theory (Get your mind out of the gutter!!) and top tips for designing your own week of healing. imageOne thing I know for sure. There is no quicker way for me to find healing than to move my boney (I wish…) behind towards the kitchen and get cooking. Especially baking works like instant therapy for me and when I am worn and tired, an afternoon behind the stove always seems to be just what the doctor ordered.

imageThis week of healing I got a double therapy session when I made these yummie muffins with my 6 year old nephew Jaden. I have written about him and what a bundle of joy he is in my life before. But as he is growing older and getting way more interested in his computer games than in his old aunty D it was becoming increasingly difficult to keep him entertained. Enter these wonderful muffins!

imageThere is one thing that Jaden likes almost as much as his computer games and that is apple pie. To be specific, apple crúmble pie. Imagine his delight when he discoved that we were not only going to make apple crumble pie ourselves, but we were gonna make apple crumble pie muffins! The dream marriage of any apple pie loving 6 year old. To add to the fun of course we would be baking them in our pyjamas…. For a rare hour and a half he willingly put away his ipad and his royal highness himself joined me in the kitchen as we mixed, scooped, baked, tasted and laughed.

imageThe muffins came out like a dream and as we sat on my bed, pillows piled high in our backs, munching on them and basking in eachothers love there was nothing in the world that could have been more healing than that precise moment.

These muffins are sweet, 6 year old pleasingly sweet. Yes sirrie Bob. So this one is a special autumnal Vata treat to enjoy with a cup of hot chai while the fall wind is howling outside.

Makes 12

Based on a recipe by Women’s weekly cookbooks


  • 190 grams peeled apple in small dice
  •  2 tablespoons coconut blossom sugar
  • juice of 1 orange
  • 12 jumbo golden raisins
  • zest of 1/4 orange


  • 375 grams spelt flour
  • 1 teaspoon baking powder
  • pinch of himalaya salt
  • 1 teaspoon cinnamon powder
  • 130 grams coconut blossom sugar
  • 100 grams melted ghee
  • 250 ml milk (you can also use any nut milk of your choice)
  • 1 lightly beaten egg
  • 1 teaspoon vanilla extract

Crumble topping

  • 35 grams spelt flour
  • 3 tablespoons coconut blossom sugar
  • 2 tablespoons oat flakes
  • 30 grams melted ghee

For the filling put all ingredients, except the orange zest and golden raisins, in a small sauce pan. Bring to the boil and than lower the heat to its lowest setting. Simmer uncovered for about 5 to 10 minutes until the apple is soft and almost all the moisture has evaporate. The filling should look like a thick compote. Take off the heat, mix in the orange zest and leave to cool.

Grease a 12 hole muffin pan with some ghee. Make sure to also grease the top of the tin around each muffin hole. Preheat your oven to 175 degrees C.

To make the batter sift dry ingredients in a large bowl. Stir in remaining ingredients with a wooden spoon. Don’t over work the batter.Fill each muffin hole half full using half the batter. Spoon a nice full teaspoon of filling on top of the batter. Press a golden raisin in the center of the filling. Now spoon the rest of the batter over the filling.

Make the crumble by mixing all ingredients in a small bowl with a spoon until you get a consistency that resembles wet sand. Liberally sprinkle the crumble topping over the muffins.

Bake the muffins in the middle of the oven in 15 to 20 minutes. The last 5 minutes you can put the muffin tray higher up in the oven so the crumble topping becomes nice and golden. Take out of the oven and leave in the tin for 5 minutes before carefully removing each muffin unto a wired rack to cool down completely.

Voor 12 muffins

Gebaseerd op een recept uit Women’s weekly cookbooks


  • 190 gram geschilde appel in kleine blokjes
  •  2 eetlepels kokosbloesemsuiker
  • sap van 1 sinaasappel
  • 12 jumbo gouden rozijnen
  • rasp van 1/4 sinaasappel


  • 375 gram speltmeel
  • 1 theelepel bakpoeder
  • snufje himalayazout
  • 1 theelepel kaneelpoeder
  • 130 gram kokosbloesemsuiker
  • 100 gram gesmolten ghee
  • 250 ml melk (je kan ook een notenmelk naar smaak gebruiken)
  • 1 geklopt eitje
  • 1 theelepel vanille extract

Crumble topping

  • 35 gram speltmeel
  • 3 eetlepels kokosbloesemsuiker
  • 2 eetlepels havervlokken
  • 30 gram gesmolten ghee

Doe voor de vulling alle ingrediënten, behalve de sinaasappelrasp en de rozijnen, in een klein pannetje. Breng aan de kook en verlaag dan het vuur. Sudder zonder deksel 5 tot 10 minuten tot de appel heel zacht is en bijna al het vocht is verdampt. Je wilt een vulling met de dikte van een compote. Haal van het vuur en mix er de sinaasappelrasp door. Laat afkoelen.

Vet 12 muffinvormpjes met wat ghee in. Zorg ervoor dat je ook de bovenkant van de vorm invet. Verwarm je oven voor op 175 graden C.

Om het beslag te maken zeef je alle droge ingrediënten in een ruime kom. Voeg overige ingrediënten toe en meng goed met een houten lepel. Vul de muffinvormpjes halfvol met de helft van het beslag. Schep hier een flinke theelepel vulling op en druk een rozijn in de vulling. Schep dan de rest van het beslag in de vormpjes. 

Maak de crumble door alle ingrediënten in een klein kommetje te mengen tot je een mengsel krijgt dat op nat zand lijkt. Bestrooi de muffins rijkelijk met de crumble topping.

Bak je muffins in het midden van de oven in 15 tot 20 minuten. Je kunt de muffins de laatste 5 minuten hoger in de oven schuiven zodat de crumble topping mooi goudbruin bakt. Haal uit de oven en laat in de vorm 5 minuten afkoelen voor ze uit de vorm te halen en de muffins op een rek volledig af te laten koelen.
